Enchiladas


Two weeks ago, I made some lovely enchiladas, and here's a photo

They look good - what's the recipe? We're in a bit of a Mexican-ish food phase ourselves atm - we made tamale pie on Mon, then a Mexican seafood soup on Tues, and the burritos last night. So I'd hate for the enchiladas to feel left out, lol...

It was quite simple. Cut the steak into strips, and throw it into the frying pan with water and tomato paste, and let that cook while you also cooked rice. while you cook the steak, add pepper, paprika, and if you have any, capsicum, kidney beans, etc. We didn't though, 'cos we were out, but we did put beans in. When the rice is cooked, add it to the steak and sauce. Then put the sauce into the tortillas, put them all into the tray, and pour on any left over sauce, and then pour on the curried tin tomatoes. Finally sprinkle grated cheese on top, and shove it in the oven.
